The products of each region are used to make local meals. We highly recommend to give it a try to those who want to experience Japanese local food of a certain area.
Since the way ingredients are combined and cooked is peculiar to each region it can be an interesting experience. If it is a place near the sea, their dishes will be mostly based on marine-products, whereas if you find yourself near the mountains, you might find dishes with wild plants and other herbs. Even within the same region if you have the same dish in different places, it can have a different taste, because it really depends on the local ingredients used.
By eating in one place only, you might not be able to totally grasp all the components of your dish. So it would be interesting if you got to compare the same food experienced in different places.
